Best + Easiest DIY Hot Chocolate Recipe


Another post that I almost feel bad calling DIY or a recipe because it's so easy!
Hot chocolate is my most favorite thing this time of year…I love it in a my gold mug, with whipped cream and marshmallows.
I usually just boil water and add it to a dry powder mix, but not any more.
I recently discovered Nutella hot chocolate. Are you kidding me.
So amazing. And, it's super simple. 

Just measure out milk in your mug and pour into a pot that's heating up on the stove
Scoop out 1 or 2 (or more...) tablespoons of Nutella
Mix well with a wooden spoon until the Nutella melts.

That's it!
The best, easiest and most delicious DIY Nutella hot chocolate.

{guest post} Sweet Potato Tacos

Happy Monday my dears!
I'm en route back from Chicago (updates & pics to come...the wedding was incredible. Such a blessing to spend time surrounded by my favorite people & so much love!)

I am very happy to welcome a special guest today, Jenn. 
She is an inspiration to me with her focus on healthy foods. Many of you know, I've been vegetarian for almost 6 months now & I try my hardest to be vegan and gluten free as well.

Aloha Everyone! 
 My name is Jenn and I am the author behind Jenn's Adventures, which is mostly a healthy living blog sprinkled with my life adventures! I'm a Maui Girl who recently relocated to Seattle due to a family medical emergency. You can read more about that (and me!) here and here. I was beyond excited when Mae asked me to guest post, and I am thrilled to chat with you all today! Mae is a woman after my own heart ~ I have a passion for both law and fashion, so I am certain we would be besties in "real life" =) I have always been a foodie, and am known for taking pictures of good eats, and since Mae follows me on Instagram she gets to see it all first hand! It usually ends up on my blog sooner or later and today I'm going to share with you one of my latest favorites!



Sweet Potato Tacos 
(vegan, gluten free, soy free) 
Yields 10 - 12 tacos (or more, we had lots of left overs!) 


Ingredients:
1 - 2 sweet potatoes 
1 cup black beans 
1 large red bell pepper (sliced) 
1 medium red onion (sliced) 
2 garlic cloves (minced) 
1 teaspoon chili powder 
1 teaspoon turmeric 
1 teaspoon pepper 
1 teaspoon Himalayan salt 
pinch of cayenne 
1 avocado 
1/2 lemon (juice + zest) 
2 tablespoons oil of choice (I used extra virgin olive oil) 
1 healthy handful cilantro 


Directions:
1) Boil the sweet potato until soft. Remove skin and cut into cubes OR mash/puree. 
2) Soak and boil the black beans until soft. 
3) Preheat oven to 375° F and line a large baking sheet with parchment paper. In a large bowl, whisk the dry ingredients then add the wet ingredients to the dry ones. Throw in all your veggies and toss everything together until all is evenly coated. Cook for about 25 minutes. When there is about 10 minutes left, add in your tortillas to soften. 
4) Serve immediately - Garnish with cilantro and a couple slices of avocado. I make sure to always have a bag or two of Daiya [day-ah] on hand, and if you're wondering where the sour cream is, try adding some SoDelicious plain yogurt!

vegetarian thanksgiving {and links a la mode!}

I just gotta say...there's a lot going on over here today!

You guys, I missed that I was selected for IFB's Links a la Mode on 3 November! (This not having a laptop thing is really messing with me! I'm totally out of the loop.)  Such an honor!  Thanks, IFB!  I'm really sorry I didn't get a chance to publish the whole list, so I'm trying to get the code so I can make up for it.  Stay tuned.


And, I really wanted to share some vegetarian Thanksgiving recipes with you all too just in case you need some last minute ideas!


Some of you may have seen my tweets about going vegan.
(I shouldn't make such bold claims because I'm still occasionally eating fish, but hey I'm trying!)


So far, it's been easy enough but what's a girl to do for Thanksgiving?!

I started doing some research, 
there's a lot of options for a vegetarian Thanksgiving feast!

I realize they're not fully vegan, but baby steps right?


And even if you're not vegetarian, these would still make 
fabulous side dishes for the star of your show, the turkey.

I'll be celebrating on Saturday and luckily 
my dear friend/the hostess is vegetarian, so I know I'll be covered!

{fall recipe} mini apple pies


Well, the title is a bit of a misnomer...as this isn't really a recipe.  I didn't measure a single thing.  The truth is, I just wanted an apple pie!  And the thought of actually baking a big pie was quite daunting.  But, break it up into little muffin sizes and that seemed like no problem at all.  This time of year makes me wish I was back home and this little treat was the perfect remedy.  It smelled like Fall!  It took maybe 20 minutes max to prepare and was so incredibly easy.  Sorry there are no measurements, times or temperatures because I really didn't pay attention to any of it.  I just added a dash, heated up the oven, and waited for my nose to tell me when they were done.  Enjoy!
